Pineapple Raita

INGREDIENTS

32 oz. Plain Yogurt

8 oz. Diced Pineapple in Juice drained

2 oz. Shelled Pomegranate Seeds

1 oz. Chopped Cilantro

1 oz. Grated Fresh Ginger

1 oz. Finely Chopped Fresh Jalapeno Pepper

2 oz. Toasted and Ground Cumin Seeds

1/2 oz. Salt

DIRECTIONS

  1. Whisk Yogurt. Add all the above ingredients except Pomegranate Seeds, and reserve a few pieces of diced pineapple for garnish.
  2. Transfer Raita to bowl, hold cold for service.
  3. Just before service, garnish with Pomegranate seeds and a few pieces of diced pineapple.
